Oak Barrel Fermented and Aged

With few exceptions, our sour beers are barrel fermented and aged for years before release.

Spontaneous Fermentation

We started experimenting with spontaneous fermentation in 2016 and now the majority of sour beer is made with this traditional method.

Bottle and Keg Conditioned

All our sour beers are bottles and keg conditioned for natural carbonation.
